Spicy Lemongrass Chicken

1 small lemon 2 cups buttermilk 1/4 cup olive oil 6 garlic cloves, smashed, divided 1 tablespoon chopped fresh thyme 2 tablespoons kosher salt, divided 1 teaspoon black pepper 1 (3-pound) organic whole chicken, giblets removed 6 thyme sprigs Fresh thyme leaves, for garnish
