• 1 Pears (35 min – 175ºF)
• 150 ml White Wine
• 25 ml Maple
• 1 tsp Cinnamon
• 1 tsp Cardamom
• 5g Ginge
• Sea Salt
For Plating
• Crumble of (Air Fried) Pumpking Spice Bread
• Vanilla Ice Cream
• Whiskey (optional)
Cooking Instructions:

Prepare by mixing the white wine, cinnamon, cardamom, ginger, sea salt, and maple in
a small bowl; make sure to also peel the pear.
Place the peeled pear with the wine & maple mixture inside a vacuum bag, seal it, and
pump all the air out of the bag with the accessory pump.
Set the Yedi Sous-Vide to 175 ºF
for 35 minutes
.
Once done, remove the pear and slice them in wheels while they’re still warm, handle
with care.
For plating, you may serve the wheels of pear warm or cold over a bed of crumbled
(Air Fried) Pumpkin Spiced Bread, and top with vanilla ice cream. You may add a drip
of Whiskey on top. Enjoy!’
