Recipe: Per Gallon
1 gallon of Juice (Welch works well)
Citric Acid 3g per gallon
Citric Acid 1 LB.
2 pounds of cane sugar (less is you want a dryer wine. Aim for an OG of 21 Brix or 1.007)
1/2 Tsp. Yeast Nutrient

Pectic Enzyme Powder 1 oz.
Wine Yeast: ( I used R26 from Vitner’s Harvest)
EC-1118 Lalvin Champagne Yeast
