Hakka Yellow Wine Chicken Recipe (客家黄酒鸡)

Glutinous rice wine is much sweeter and do not have the harsh, bitter taste like Shaoxing wine. My aunt cooks amazing Hakka dishes and even brew her own glutinous rice wine at home. It is a laborious process which takes more than 3 months but the end result is satisfying. However, you can easily buy a bottle of glutinous wine from shops, the end result is just as aromatic.

Hakka Yellow Wine Chicken
客家黄酒鸡

Ingredients
1 Chicken, chopped into chunks
1/2 bottle yellow wine or shao xing wine
2 pcs old ginger
Some black fungus, soaked and cut into small pieces
6 pcs mushrooms, soaked and cut into halves

Seasonings
2 tbsp sesame oil
1 tsp salt
1 tsp sugar

Method
1. Heat up sesame oil, stir fry ginger till fragrant.
2. Add chicken, black fungus and mushrooms. Stir fry till fragrant.
3. Pour in yellow wine and 1/2 cup of water. Cook for 20 minutes.
4. Season with salt and sugar. Serve.
