This recipe makes 6 portions
Ingredients:
• Parsley – 6 sprigs
• Thyme – 6 sprigs
• Bay leaves – 2
• White onion – 1
• Bella mushrooms – 250 gm
• Unsalted butter – 2 Tbsp
• Bordeaux wine – 500 ml
• Salt to taste
• Pepper to taste
• Chicken stock – 500 ml
• Tomato paste – 2 Tbsp
• Bone-in chicken thighs – 2 lbs
• Brandy – 100 ml
• Carrots – 3
• Pearl onions – 150 gm
• All purpose flour – 50 gm
• Thick cut cube bacon – 250 gm
• Olive oil as needed for cooking
