Prädikat Auslese
The #Auslese is a predicate for a particularly high quality wine, which is characterised above all by the use of noble rotten berries. As with every #Prädikatswein (QmP), the classification is also made during the selection process by the minimum must weight. Auslese is classified as a wine of the quality between Spätlese and Beerenauslese and requires a minimum must weight of 95° Oechsle. Furthermore, the wine must be made from berries from a single growing region and no enrichment may be used for the wine to be considered a Prädikatswein (QmP). The high quality of the wine is guaranteed by the official examination at the selection, as with other types of quality wine.
Harvesting takes place relatively late for wines with the Auslese rating, so the berries are fully ripe and often affected by noble rot, which has a positive effect on the quality of the wine. Mostly the Auslese wine is sweet and fruity in taste, with a relatively low alcohol content. Auslese wines can also be stored for a longer period of time in order to intensify this taste expression. However, if the Auslese is aged dry, the alcohol content of the predicate wine increases. It is precisely the variation of taste towards sweet and fruity that distinguishes it from the lower predicates of quality wines, such as Kabinett and Spätlese.
