Hi, today we’re talking fruit in wine. I’m Tim from Elma Wine & Liquor. Today I’m talking about fruit or fruit flavors in wine. A couple of people have asked about some of the videos where I referenced that a wine tastes like apples, or pears, or pineapples. They have asked, ‘‘Why are the winemakers putting fruit in their wine?’’
Well, they’re not. Those flavor descriptors are just terms, that we use in the wine industry, to describe the flavors of the taste that we’re getting from the wine. The wines that I’ve been talking about in my previous videos are 100% grape wines (except 007 Midgard Wines). They’re only made with grapes, not with any of other fruits.
When the winemakers crush the grapes then ferment and age it, those grapes can take on the flavors of other fruit. So, It’s not that the winemakers are actually throwing fruit flavors in wine such as blueberries or blackberries. It is that the grapes just change, and the fermentation and aging has that effect that brings out different fruit flavors in wine.
One of the ways you can think about it is that some of the others descriptors of wine are earthy, and tobacco, and leather. You wouldn’t really think that the winemakers are using those types of things in the wine to make it. Those are flavors, textures, or things that come out in the wine. That said, there are wines that are made out of other fruits. We have a couple of different varieties here, blueberry, apple, and pear wines. Those wines are made with those fruits and they’re labeled as such, which is different than the traditional grape wines that we’re used to just taking on the flavors and characteristics of other fruits.
