MDM KOH’S BAK CHANG
====================
This recipe makes approximately 35 rice dumplings.

INGREDIENTS FOR THE FILLING

Braised pork belly:
2kg pork belly
Salt
2-3 cups water
¼ cup sugar
½ cup dark soya sauce
1 tsp MSG
¼ tsp five spice powder
¼ tsp cinnamon powder
2 cinnamon sticks
2 tbsp Martell cognac
10 star anise
20 slices blue ginger
1 Chinese bowl garlic cloves, unpeeled

Braised mushrooms:
1 tbsp oil
4 cloves garlic, chopped
¼ tsp dried oysters
200g dried mushrooms, soaked for 3 hours.
1 tbsp dark soya sauce
1 tbsp Hua Diao wine
¼ cup water
1 tsp mushroom seasoning granules
¼ tsp cinnamon powder
1 tsp cornflour, dissolved in water

Chestnuts:
300g dried chestnuts, soaked overnight
1 tbsp oil
3 cloves garlic
1 tsp salt
A dash of MSG
1 tsp sugar
1 tsp pepper

INGREDIENTS FOR THE GLUTINOUS RICE
5 tbsp oil
½ cup shallots, sliced
3 handfuls dried shrimp
¼ cup garlic, chopped
2 tbsp dried oyster, chopped
2kg glutinous rice, soaked for 2 hours
1 tsp cinnamon powder
2 tsp five spice powder
1 tsp coriander powder
2 tsp white pepper
1 tbsp salt
1 tbsp lard
3 tbsp dark soya sauce

TO WRAP THE BAK CHANG
You will need 70 bamboo leaves and raffia string.

MRS LAM’S HAKKA NOODLES
====================
This recipe feeds 15 people.

You will need:
Noodle/Pasta maker. Mrs Lam uses the Italian Ampia Tipo Lusso 150.

For the noodles (makes 12 clusters):
1 kg of wheat flour
1 tsp potassium carbonate
450ml water
For the minced meat:
1 cup cooking oil
500g minced pork
10 cloves of garlic, finely chopped (or to taste)
3 – 4 tbsp fish sauce (or to taste)
3 tbsp Dark Soya sauce

Garnish:
500g Bean sprouts, cooked
Spring onions, chopped
Fried garlic + garlic oil

MDM TSENG’S OYSTER/CLAM OMELETTE
====================

INGREDIENTS
3 eggs
1 tsp shallot oil
½ tsp soya sauce
Peanut oil
Lots of coriander
As many oysters or clams as you can fit
For the batter
4 tbsp sweet potato flour
1 tbsp rice flour
3 tsp shallot oil
1 tsp sesame oil
1 tsp chicken stock powder
1 handful of spring onion
½ cup water

MDM ONG’S RED WINE CHICKEN MEE SUA
====================
This recipe feeds 20 people.

INGREDIENTS

For the rice wine:
Red glutinous rice wine
1kg glutinous rice (nuo mi)
150mg red yeast rice (hong ju mi)
1-2 pieces small yeast balls (also known as wine biscuits) – available at chinese medical halls
1 glass jar
This will make about 2 litres of wine; the yield may vary.

For the red wine chicken mee sua:
2 whole chickens, cut into pieces
2 whole gingers, julienned
¼ cup sesame oil
750 ml red glutinous rice wine
1 tbsp red glutinous rice wine residue
1 pot boiling water
Mee sua
